Chicken Noodle Soup

This easy homemade chicken noodle soup recipe is healthy, satisfying, and tastes incredible. 

Prep time: 15 min  Cook time: 90 min Ready In: 2 hours Servings: 4
Ingredients:
  • one cooked rotisserie chicken(Costco chicken is easy and affordable!)
  • 1 quart of chicken stock
  • 4 quarts of water (total stock about 6 quarts)👌🏻
  • 3 cups of peeled baby carrots
  • 1 chopped sweet onion
  • 5 chopped celery stocks one
  • 2 garlic cloves
  • 1 Tbsp Salt
  • 16 oz Egg pasta (about 6 cups of dry pasta) (I like Homemade Style Country Pasta is super good)
Directions:

1. Boil chicken stock and water in large pot 8 Qt
2. Add in Carrots, onion, celery, garlic, salt and let simmer after brought to a boil
3. Place the chicken in a boil strainer

4. Place in the boiling stock to let flavor from the skin, bones, and meat enrich the taste.  Cover with a lid and cook on simmer for 60 min
5. Remove chicken in strainer after 60 min simmer is done
6. Let chicken cool and then separate chicken from bones, skin and all the other stuff on the body.

7. Place shredded chicken in stock and stir in with vegies
8. Add noodles to stock pot and let cook for another 18-22 minutes (follow noodle cooking instructions)
9. Serve and eat.

This will likely make plenty of soup, so store in a nice sealable container in the fridge and enjoy for lunch or dinner. It only gets better a day or two later.

 Eating Suggestions:
  • Place in bowl and let cool for the younger kids
  • You can add avocado, and/or dried onions to add flavor and crisp
  • Spice it up if you wish with your favorite hot sauce.
